At our house, we love vegetables, and one of our favorite things to do is roast vegetables in the oven – it’s the best way to cook them. Roasted Broccoli, Roasted Asparagus, a Whole Head of Buttery Roasted Cauliflower, or even Roasted Carrots – we love to roast whatever vegetables we have in the fridge. Roasted vegetables make such a healthy side dish – and served with some Cajun blackened chicken and buttery rice pilaf – you have the perfect meal.

Roasted Broccoli with Olive Oil and Garlic is one of our favorite side dishes, not only because it is such an easy side dish to make but because of how delicious it is. It’s my favorite way to add vegetables to our dinner, even when we are just eating leftovers – I sometimes just cook up a bunch of broccoli to eat on the side.

If you’re a broccoli lover like I am, I think you will love this recipe!

🥘 Ingredients Needed

  • Fresh Broccoli Florets – You can use a bag of already cut-up broccoli florets (I love the giant bag from Costco) – or you can cut up a fresh crown of broccoli into florets.
  • Fresh Garlic Cloves
  • Olive Oil
  • Kosher Salt – I add salt before cooking, then finish the broccoli with another little sprinkle of salt.
  • Black Pepper
  • Crushed Red Pepper Flakes
  • Optional Ingredients – Sliced Onions, Fresh Lemon Juice, and Parmesan Cheese

  • Aluminum Foil, Parchment Paper, or a Silpat
  • A Large Mixing Bowl
  • A Sharp Knife and a Cutting Board

🥣 How to Roast Broccoli in the Oven

Roasted broccoli is quick and easy to make, and this crispy broccoli is in our regular rotation.

First, preheat your oven to 375°F. 

Next, chop up a head of broccoli into somewhat bite-sized pieces. 1-2-inch pieces are ideal. (You can save the stem/stalk and leaves that you trim off for making bone broth, broccoli cheese soup, or feed it to your dog.) Then, finely dice 3-4 cloves of garlic and (optionally) dice half of a medium-sized onion. (The onion is optional but does add some more flavor!)

Place the chopped broccoli and optional onion in a large bowl.

Drizzle 3-4 tablespoons of high-quality extra virgin olive oil over the chopped broccoli. (Picture 1)

Season with garlic, salt, black pepper, and red pepper flakes. (Pictures 2 – 3) Toss to combine. (Picture 4)

Spread your broccoli out in a single layer on a baking sheet with a non-stick mat, parchment paper, or on some aluminum foil for easier cleanup! (Picture 5)

Roast the broccoli for 10-15 minutes, then toss the broccoli and rotate the baking sheet 180° to ensure even cooking.

Bake for another 10-15 minutes until broccoli is fork-tender but not mushy. If you use onions, they should be translucent.

*Cooking time may vary just a little based on the size of the broccoli pieces and how well you spread them out on the sheet pan. The longer you cook the broccoli, the softer it will be and the crispier the edges will be.

Note

If you want to get that burnt broccoli crispiness that some people love, you can move the pan under the broiler for a few extra minutes at the end.

It will have a nice hint of lemon flavor, some subtle roasted garlic flavor, and a little bit of melty cheese.
  • Extra Crispy Broccoli – Toss some bread crumbs with the broccoli to give it a little added crunch.

Store leftover broccoli (once cooled) in an airtight container in the refrigerator.

You can reheat your broccoli in the microwave (it will lose some crunch this way) or reheat it for 5 – 10 minutes in the oven at 350°F. You can also reheat it in the air fryer.

Can you roast frozen broccoli? If so, for how long?

Yes, you absolutely can roast frozen broccoli. Do NOT let it thaw – just toss it in oil and season it, then spread it on a pan. Increase the heat, though, and roast at 425°F – 450°F. This will keep the broccoli from getting soggy.

Can you use garlic powder in place of garlic?

Absolutely. I like to use 1 – 2 teaspoons of garlic powder per head of broccoli when I am out of garlic.
