Hoppin' John - New Year's Day Black Eyed Peas

- Bacon - Onion, Celery, & Green Pepper - Garlic - Chicken Stock - Black Eyed Peas - Kosher Salt - Creole Seasoning - Jalapeno - Bay Leaves - Ham Hock Optional: Leftover Ham or Tasso, Andouille Sausage

Saute andouille until browned. Set aside.

Cook Bacon

Cook bacon, then add peppers, celery, onions, & garlic. Then add ham.

Add Beans

Season, then stir in black-eyed peas, and then add ham hock and bay leaves.


Add broth, then bring to a boil. Reduce heat, then let the beans simmer until cooked but not mushy.

Enjoy as a side dish or as a New Year's Day main course with cornbread and collard greens.
