Okra Recipes & How to Freeze Fresh Okra

Our garden harvests this summer have been incredible, so I want to preserve what I can for winter use.

Here's how to preserve your okra   -> -> ->

First, cut the okra up into small pieces.

Step 1

Blanch okra by boiling it for 2 - 3 minutes.

Step 2

Drain and run cold water over the okra to stop the cooking process.

Step 3

Dump the okra into a bowl of ice water to completely stop the cooking process, then drain and rinse.

Step 4

Dump the rinsed okra onto a cookie sheet and freeze for 30 minutes to an hour.

Step 5

Make sure you choose a size that will fit in your freezer.

Remove from the freezer - it should be only partially frozen.

Step 6

Partially "pre-freezing" will keep the okra from freezing into a big clump if you just dump it into a bag.

Move the okra to a freezer-safe zip-top bag.

Step 7

Store in the freezer to use for gumbo in the winter!
