The Best Bacon & Onion Jam with Balsamic & Thyme

Bacon, onions, salt, pepper, thyme, brown sugar, and balsamic vinegar.

Dice up bacon into bite sized pieces.

Add bacon to a skillet over medium heat.

Cook, cook, cook until bacon is crispy.

Strain bacon to remove excess grease.

Thinly slice onions - you can do this while the bacon is cooking.

Add some bacon grease to pan and cook onions.

And cook, and cook, and cook.

Cook until onions are browned.

Then add some balsamic to deglaze the pan and scrape the pan.

Add the rest of the vinegar & brown sugar & season.

Cook until bubbling and stir as needed.

Add bacon and cook for about 5 minutes, stirring as needed.

Pour the mixture into a food processor and chop it up.

Scrape down the sides and chop some more.

Taste test - it is perfect!

Serve with cheese and crackers.

Heat before serving if prepped ahead of time.
