Easy Oven Roasted Broccoli with Garlic and Olive Oil

  • Preheat your oven to 375°F. 
  • Chop up a head of broccoli into somewhat bite-sized pieces. 1 - 2 inch chunks are ideal. Save the stem & leaves that you trim off for making bone broth!
  • Finely chop 3 - 4 cloves of garlic and dice half of a medium-sized onion.
  • Toss broccoli, garlic, and onions in a bowl with 3 - 4 tablespoons of extra virgin olive oil.
  • Spread your broccoli out on a baking sheet with a non-stick mat or on some foil. (Easier cleanup!)
  • Sprinkle with 1 teaspoon of salt and half a teaspoon of black pepper. Optionally, you can also add a quarter of a teaspoon of red pepper flakes for a little added heat.
  • Roast your broccoli for 10 - 15 minutes and then rotate your tray 180° to ensure even cooking. Bake for another 10 - 15 minutes until broccoli is fork-tender but not mushy. If you use onions, they should be translucent.
  • Serve with any dinner for a quick and delicious meal.

Notes

Cooking time may vary based on the size of your broccoli pieces and how well you spread them out on your cookie sheet. Extra cooking time will make the broccoli softer - we prefer to keep it crunchy. You can also add cauliflower or carrots to your bake to mix it up!
