Easy Oven Roasted Broccoli with Garlic and Olive Oil
Oven Roasted Broccoli with Garlic and Olive Oil is a fresh, quick, and flavorful way to add vegetables to your weeknight dinners. This broccoli is bright, crunchy, and packed with flavor.
Next, chop up a head of broccoli into somewhat bite-sized pieces. Then, finely chop garlic and (optionally) dice half of a medium-sized onion.
1 head broccoli, 2-3 cloves garlic, minced or finely chopped, ½ medium onion
Place the chopped broccoli and optional onion in a large bowl.
Drizzle extra virgin olive oil over the chopped broccoli.
3-4 tablespoons olive oil
Season with garlic, salt, pepper, and red pepper flakes and toss to combine.

Spread the broccoli out in a single layer on a baking sheet covered with a non-stick mat, parchment paper, or foil for easier cleanup!
Roast the broccoli for 10-15 minutes, then toss the broccoli and rotate your baking sheet 180° to ensure even cooking.
Bake for another 10-15 minutes until broccoli is fork-tender but not mushy. If you use onions, they should be translucent.*

Notes
*Cooking time may vary just a little based on the size of the broccoli pieces and how well you spread them out on the sheet pan. The longer you cook the broccoli, the more it will dry out and the crispier the edges will be.If you want the broccoli to be soft, cook it at a lower temperature with the broccoli florets close together so it steams a bit, more than roasts. (You can even cook it in a baking dish, instead of on a sheet pan.)
