Instructions
Add all ingredients to the bowl of a stand mixer.* Start with 2 tablespoons of mayonnaise. (You can add more if needed once it is all mixed to achieve the consistency that you want.) Mix together well.
4 oz sharp cheddar cheese, 4 oz extra sharp white cheddar, 3 oz cream cheese, 4 oz jarred pimiento peppers, 2 tablespoons mayonnaise, 2-3 jalapeños, ¼ teaspoon onion powder, ¼ teaspoon garlic powder, ¼-½ teaspoon kosher salt, ¼-½ teaspoon black pepper, ¼ teaspoon cayenne pepper
Taste and adjust the salt, pepper, and cayenne - I start with ¼ teaspoon of each, then increase if needed. (Add more mayonnaise if desired now as well.)
*If you don't have a mixer, mix the cream cheese, mayonnaise, and spices - I like to use a fork to mash up the cream cheese. Then stir in the shredded cheeses.
Serve immediately or refrigerate to let the flavors meld and develop a thicker consistency.
Store in the refrigerator for up to a week.
Notes
Add the salt and pepper to taste - if your cheese is salty, you might not need to use as much. If you like salty things, you might end up using it all!More mayonnaise and cream cheese can be added if it seems too spicy for you - add more cayenne or another jalapeño to make it more spicy.
