If you froze any of your leftover Thanksgiving turkey – I like to cook a turkey breast in the crockpot – you can use the meat to make gumbo. I like to make the roux a bit darker than I would if I was making Chicken and Sausage Gumbo and I use turkey stock as the base!

Duck Gumbo

If you have duck hunters in your family (or leftover Christmas duck!) I like to make duck gumbo as well. I make a delicious broth by simmering the stock with the ducks in the pot for several hours until the meat falls off the bone. Then, make your favorite gumbo using a dark chocolate colored roux. Serve over white rice with garlic toast.
