- Butter - Red Onion - Jalapeño - Diced Tomatoes - Kosher Salt, Paprika, Cumin & Black Pepper - Cream Cheese - Cheddar Cheese -Heavy Cream
Set Instant Pot to Sauté and melt butter. Then add diced red onion, jalapeño, and tomatoes and cook until the red onions are mostly translucent. Add seasoning.
Stir, then top with cream cheese. Do not stir. Cancel Sauté Mode and set to Manual Mode at High Pressure for 1 minute.
Release the pressure using a controlled release, the stir. Add shredded cheddar and stir until melted. Add heavy cream to desired thickness.
The cheese will get creamier as the cheese melts. Serve with tortilla chips!
To reheat, set Instant Pot to Keep Warm and cover, stirring as needed.
