Creole Chicken & Sausage  Gumbo Recipe

Bake okra to remove slime & partially cook chicken.

Dice sausage depending on your preference. We like quarters.

Sauté andouille until it caramelizes.

Dice green onions.

Dice green peppers.

Dice onions.

Dice celery.

Add oil & flour & cook the roux.

Cook & stir until it is the color of peanut butter.

Add trinity and stir.

Then stir in baked okra.

(You can add the trinity before or after the okra. That isn't too important.)

Stir until onions soften, then add garlic & green onions.

Add seasoning.

Then add tomatoes.

Add chicken & andouille sausage.

Add broth and stir.

Bring to a boil.

Reduce heat to simmer & stir.

Smells good!

Serve over white rice!
