Classic Southern Potato Salad

Potatoes, hard-boiled eggs, dill pickles, celery, onions, mayonnaise, mustard, pickle juice, salt, pepper, & Tony's.

Start boiling a pot of salted water, then wash & peel potatoes.

Dice up potatoes into large cubes.

Add potatoes to salted water and boil until fork tender.

Drain potatoes, rinse under cold water, then spread out to cool.

Whisk together mayo, mustard, & pickle juice, then whisk in spices.

Mash up 1/2 cup of potatoes & mix that into the dressing.

Stir in celery, pickles, & onions.

Dice eggs - I like to use a cookie cooling rack.

Combine eggs & potatoes with half the dressing & mix - turn it over into another bowl and combine with remaining dressing.
